Creamer potato

A creamer potato is a variety of potato harvested before it matures to keep it small and tender. It is generally either a Yukon Gold potato or a Red potato, called gold creamers[1] or red creamers respectively, and measures approximately one inch in diameter.[2]

The skin of creamer potatoes is waxy and high in moisture content, and the flesh contains a lower level of starch than other potatoes, which makes it suitable for boiling.[2]

There is ongoing research into the optimal production of creamer potatoes.[3]
